INGREDIENTS
Caster Sugar - 5 ozs
Butter - 8 ozs
Plain Flour - 9 ozs
Corn Flour - 6 ozs
Baking Powder - 1 tsp
Vanilla essence - 1 tsp
Fried Cashewnuts - 150 gm
Egg - 1
Egg Yolks - 2 (for brushing on top before baking)
Some cashewnuts for decoration
METHOD
1. Sieve plain flour, cornflour and baking powder together.
2. Cream butter and sugar until light and fluffy.
3. Pound cashewnuts until fine.
4. Add in egg into the creamed mixture in (2) and add in vanilla.
5. Mix the pounded cashewnuts with the flour mixture in (1) above and fold this into the
creamed mixture in (4).
6. Make into cashewnut shape and use cashewnut as stem or roll into balls and put a
cashewnut on top.
7. Brush with egg yolk before baking. Bake at 350°F. Yields about 140 - 150 biscuits.
