Shortbread

INGREDIENTS

Butter                           - 4 oz
Caster sugar                 - 2 oz
Corn flour                     - 2 oz
Plain flour                     - 4 oz
A pinch of salt

METHOD

Beat butter and sugar till white and creamy. Mix in dry ingredients and kneed till smooth. Press into a 4” x 7” tin and prick dough and bake in oven at 325º F for about 25 minutes, until lightly coloured and firm to touch. Remove from oven and cut into squares when cool.
