INGREDIENTS
Butter - 125g ( 4 oz)
Coconut - ½ cup
Mixed nuts - ½ cup
Brown sugar - ½ cup
Caster sugar - ½ cup
Cornflakes - 3 cups (or 2 cups of oats)
Egg - 1
METHOD
Combine butter and sugars in saucepan, heat until butter is melted. Gently stir in coconut, cornflakes, nuts and lightly beaten egg. Drop teaspoonfuls of mixture on lightly greased oven trays, about 2 ins apart. Press mixture together lightly with fingers. Bake in moderate oven about 10 minutes or until golden brown. Stand few minutes until biscuits become firm. Lift to wire racks to cool.
