Chocolate Iced Layer Cake

INGREDIENTS

Butter                           - 8 oz
Castor sugar                 - 8 oz
Eggs                             - 5
Self rising flour              - 8 oz

Chocolate Icing

Cocoa powder              - 4 level tbls
Boiling water                - 6 tbls
Butter                           - 2 oz
Few drops vanilla essence
Blend all this together with 1 lb. (16 heaped tbls) sieved icing sugar.

METHOD

Cream butter and sugar thoroughly. Beat in eggs gradually and fold in flour. Place in two greased 8 inch sandwich tins. Bake in oven at 335º F on third and fourth shelves for 35-45 minutes. Turn out and cool on wire tray. Cut each cake into two layers. Sandwich layers with icing and spread remaining icing over top and sides.
