Chocolate Sponge Cake

INGREDIENTS

Eggs                 - 4
Plain flour         - 1 cup & 1 tbls
Sugar               - 1 cup
Tartar               - 2 tsp
Cocoa              - ½ cup
Bi carb.soda     - 1 tsp
Butter               - 2 ozs
Hot water         - ½ cup

METHOD

Beat only egg whites in a bowl until thick. Then add egg yolks and mix evenly. Gradually add sugar and beat until thick and creamy. Fold in sifted dry ingredients, water and melted butter. Pour into two 8”greased sandwich tins and bake in moderate oven for 20-25 minutes. Allow to cool. Spread with one third of milk chocolate frosting and place second layer on top of first layer. Cover top and side with remaining frosting. Decorate with chocolate and fruits.

Milk Chocolate Frosting

Icing sugar        - 3 ½ cups
Cocoa              - 1/3 cup
Butter               - 2 ½ ozs
Egg                  - 1
Vanilla              - 1 tsp
Hot cream        - 3 tbls
Pinch of salt
Sift together icing sugar, cocoa and salt. Another bowl cream butter till fluffy. Add egg and vanilla. Add icing sugar and cocoa alternatively with hot cream. Mix well till spreading consistency. Use immediately.
